This recipe serves 4 to 6 as an entree.
I changed a little bit for mine since I don't have some of the ingredients.
340g linguine pasta
3 tbsp tomato puree
2 tomatoes, diced
1 large onion, cut in julienne strips (hiris la kata Melayu dia :B)
3 cloves garlic, thinly sliced
1/2 tsp red pepper fakes ( I used 1 packet red pepper flakes- the leftovers I got from Dominos :P)
2 tsp dried oregano leaves
2 large spring basil, chopped ( You can get this from Tesco - cheaper than Cold Storage and Jaya Grocers hehe)
4 and 1/2 cup of beef stock broth ( just mix warm water with stock - you can use chicken stock if you like)
2 tbsp olive oil
Parmesan cheese for garnish
Procedure:
1. Place pasta, tomatoes, onion, garlic, basil in a large pot. Pour in the beef broth. Sprinkle on top with pepper flakes and oregano. Drizzle top with oil.
2. Cover pot and let it boil. Reduce to a low simmer and keep covered and cook for about 10mins, keep stirring every 2 mins. Cook until almost all liquid has evaporated ( this is all up to you, i followed the blogger, I left about few inches of liquid in the bottom of the pot) or until the pasta is al dente.
3. Season to taste with salt and pepper, stirring pasta several time so the liquid distribute equally in the bottom of the pot.
