What do you do when you wanna get rid of buttermilk in your fridge?

You make muffins of course! :D Woke up pretty late today and felt like I need to do something productive. I've been thinking what I should do with the buttermilk that has been in the fridge for a week now. Must use it before the expiry date. (rasa bersalah bila membazir, mahal ok buttermilk *asian mode: ON*) So...looked up for recipes on the internet and decided to make Choc Chip Muffins since there's 2 bags of choc chips left in the fridge ( them too -_-") I'm using Aunty Rima's recipes this time since most of her recipes that I've tried so far turned out well :) Alhamdulilah!

Trust me when I said muffins/cupcakes are the easiest thing to bake :) No mixer or scale needed in this recipe. Very easy and most importantly, moist and tasty. There's nothing worst than over-baked, dry cupcakes >.<"

And also, I didn't add the cocoa powder in this recipe because I don't feel like it :P

Tips* use an ice cream scoop to get even size cupcakes :D

HAHAHA! Nampak tak 'even' dia tu! (Buruk gila) Okay i can explain..I couldn't find the muffin tray so I just bake them without it. BAD IDEA -.-' That's why they turned out flat. Almost like a cookie/pancake. 

This was the first batch, so as you can see..its quite pale than the prev photo muffins.  That's because the oven was over heated when I baked the 2nd batch. Overly tan :3 Fortunately, they still taste good :D

Other tips when making muffins/cupcakes;

  • Don't over mix the batter; or it'll turned out dry.
  • Fill 1/2 or 2/3 of the batter inside the cupcake cups. You don't want them to over-flow (just like mine -_-) & remember to use them trays!
